Ridgeview Cavendish English Sparkling Wine 2010

I somehow fail to write up some of the good wines that I drink regularly; Ridgeview's Cavendish sparkling falls into this category.  This wine opened my eyes to the quality of English sparkling wine, and I recommend it highly.  It will satisfy all but the most xenophobic of palates.  A fine and persistent bead in the glass, it has aromatics of yeast, biscuit and lemon, with some mineral notes too.  Very dry in impression, the mousse is creamy, the acid is pronounced, and the flavours remind of yeast, lemon and chalk.  This is a delicious and refreshing sparkling wine that will reward your interest.
