Structured tasting is necessary to complete the WSET diploma and in due course the Masters of Wine, but perhaps like learning to play a once loved song, it exacts its price in de-constructing what might otherwise be a source of wonder and nuance.  Hedonistic joy lurks as an unsuspecting, if welcome, victor.
